Remember as a kid your mother or grandmother used to collect all the watermelon rind after a summer picnic and then turn it into those wonderful sweet cinnamon tasting pickles? Well I found my grandmother’s cookbook and we ate a lot of watermelon at the kitchen this summer and made Watermelon Rind Pickles which taste just like I remembered. A sweet pickle with lots of cinnamon which are a perfect condiment with chicken, pork, or fish.
